Fruit and vegetable throughput is set by more than fresh kilograms per batch. Variety, maturity, piece geometry, soluble solids and pretreatment all affect freezing, vapor flow, texture and final packaging behavior.
Standardize the raw material
Define variety, maturity range and incoming temperature. Wash, sort and trim before cutting to a controlled thickness. Mixed piece sizes create mixed endpoints and reduce usable dryer capacity.
Pretreatments such as blanching, anti-browning dips or formulation steps should be validated for the specific product and market. Record drain time because surface water adds condenser load without adding saleable solids.
Choose the freezing strategy
Separate blast or IQF freezing can keep the dryer available for sublimation and improve line throughput. In-chamber freezing simplifies handling but occupies the chamber and increases refrigeration duty.
Whichever method is used, the product core must be frozen and the tray condition should remain stable during transfer. Avoid thawing or surface melt before vacuum.
Load trays for vapor flow
Use a repeatable kilograms-per-square-meter target and layer depth. Dense purees, berries and sliced fruit should not be treated as the same load just because fresh weight is equal.
Collect data from representative trays and locations. Product temperature, chamber pressure, condenser behavior and finished moisture help establish the production recipe.
Protect the product after unloading
Move dried product to a controlled-humidity area and package quickly. Select barrier film, seal design and oxygen or moisture control from shelf-life testing, not appearance alone.
The packaging line must accept the dryer discharge rate. A bottleneck after unloading exposes high-value product to ambient moisture.
