The photograph shows fruit arranged on trays inside a commercial food freeze dryer. It is application evidence, not proof that different fruits share one validated endpoint or cycle.

What can be learned from a tray demonstration

Piece size, spacing and exposed surface influence vapor release and drying uniformity. A useful trial records actual kilograms per tray and the depth of the thickest pieces.

Color and appearance can be inspected, but endpoint decisions should use weight change, product temperature and target residual moisture or water activity.

Why mixed products need care

Different fruits can have different sugar concentration, structure, freezing behavior and water load. Combining them may create an inefficient endpoint or leave the slowest product under-dried.

Early trials should separate products or clearly map tray positions so results can be compared rather than guessed.

Moving from demonstration to production

Record preparation, pre-freezing temperature, tray load, shelf recipe, pressure trend, total cycle time and post-drying result.

Use the records to calculate weekly throughput and select between the ADT-30C, ADT-35C and ADT-50C commercial platforms.
